Rye flour is made by milling the whole rye grain. This rye flour undergoes no bleaching or refinement. It therefore contains the bran and germ as well as the endosperm.
It is used mainly in baking and rye flour produces baked goods that are moist and dense. A very good source of dietary fiber, phosphorus, magnesium and vitamin B1.
