Potato Starch is a larger-grained starch that gelatinizes at relatively low temperatures (compared to wheat or corn starches).
Potato starch usually dissolves in water and is added to soups, stews, and sauces as a thickener, or dusted over foods before deep-frying. Potato starch tolerates higher temperatures than cornstarch when used as a thickener. It also produces superior flour-free sponge cakes, as it absorbs and retains moisture to a greater degree than wheat flour and produces cakes with a light texture.
