Extra virgin olive oil is the highest grade and the purest quality of the olive oil that requires it to have 100% purity. The oil is extracted by cold mechanical extractions without using any chemicals or heat. In order to be categorized as extra virgin olive oil, its fatty acid content also cannot be greater than 0.08%. In addition to chemical testing, the oil must also meet an organoleptic standard, with no defects of aroma or flavor, and a positive taste of green or ripe olives.
The taste is commonly described to have a superior taste, having some fruitiness and no defined sensory defects. It is commonly used in cooking, for frying foods or as a salad dressing.
